How to Make Nigerian Jollof Rice (Partyjollof)
1. *Ingredients*:
- 2 cups long-grain rice
- 1 can tomato sauce (or blend fresh tomatoes)
- 1 large onion, chopped
- 2-3 scotch bonnet peppers (atarodo)
- 2 cups chicken or beef broth
- 2 tbsp vegetable oil
- Spices: curry, thyme, salt, pepper
- Optional: meat (chicken, beef, or fish)
2. *Steps*:
- Wash and parboil rice. Drain and set aside.
- Blend tomatoes, onions, and peppers into a smooth mix.
- In a pot, heat oil, sauté onions till soft.
- Add tomato mix, sauce, and spices. Cook for 10-15 mins.
- Add broth, bring to boil. Add rice and meat (if using).
- Reduce heat, cover, and simmer till rice cooks (20-25 mins).
- Fluff and serve hot!
